Mangoes of the right variety are chosen as it has to be crunchy and not too ripe to be perfect for this dish. The raw mangoes are sliced thinly to make it easy to chew with added texture.
Then it is mixed together with bean sprouts, and other herbs like torched ginger, lemongrass and kaffir lime leaves.
The sauce is made with a combination of lime juice, salt, sugar & chopped roasted peanuts
This gives the dish a salty, sour, sweet and a little spicy flavour. It is well loved by everyone and good to eat even on it's own
